Seasonal Food Philosophy
Rooted in the Seasons
Our menu is built around the best ingredients each Canadian season has to offer, from spring greens to autumn root vegetables. The kitchen focuses on locally sourced produce and proteins when possible, and dishes are designed to be comforting yet refined, reflecting Canadian culinary traditions. The menu changes regularly to highlight seasonal availability.
From Hearth to Table
The hearth is central to our cooking, with many dishes finished over open flame or in wood-fired ovens. The open kitchen allows guests to see the hearth in action, and wood-fired techniques add depth of flavour to meats, vegetables, and breads. The menu balances hearty and light options for all seasons.
A Menu for Gathering
Our dishes are meant to be shared, encouraging conversation and connection around the table. Small plates and larger format dishes are available, and the menu is designed for both intimate dinners and group celebrations. Seasonal tasting menus are offered on select evenings.
